- 400 g carrots, peeled & roughly chopped
- 300 g pineapple pieces
- 4 eggs
- 80 g coconut oil
- 1 teaspoon vanilla extract
- 140 g apple puree
- 80 g honey
- 2 teaspoons Stevia powder
DRY INGREDIENTS
- 200 g oat flour
- 200 g Almond Flour
- 1 teaspoon cinnamon
- 1 teaspoon Nutmeg
- 2 teaspoons baking soda
- 150 g walnuts
- 80 g sultanas

Preheat oven to 165 degrees celcius and line a 21cm cake tin and 12 muffin tray
Weigh carrots, pineapple and wet ingredients into the Thermomix bowl, and mix on speed 5 for 15 seconds
Add dry ingredients (except sultanas) and mix on speed 5 for 5 seconds.
Add sultanas and stir in on speed 3 for 5 seconds
Spoon into muffin trays and cake tin. Cook for approximately 30-40 minutes for cupcakes, and an hour and a half for cakes, depending on your oven. Check by poking a skewer into the centre – it should come out nearly clean when the cakes are done
!I follow a gluten free & dairy free diet, so iced with a Coconut 'cream cheese' icing which I will post the recipe for soon as well!

Tip
I have based this recipe on the 'One Bowl Carrot Cake' from Quirky Cooking and edited to suit myself. This makes quite a large batch and will be enough for 12 muffins and a cake (or 24 muffins, or 2 cakes...you get the idea), so if you are only wanting to make one cake or only 12 muffins, just halve the recipe!

I made this today 1 batch but 2 cakes as described. It was yum! Definitely make it again. Great healthy alternative with no refined sugar. Instead of stevia I just put extra honey in.
Made our own frosting with the following: 1x can of coconut cream kept in fridge overnight (scrape hardened cream off top layer - some brands this may be the whole tin), 1x tbsp maple syrup, 1x tsp vanilla bean paste.
place all in TM and whizz on speed 5 until smooth. careful not to whizz too long as the cream will get warm and turn soft. Spread over cake and enjoy!
