Ingredients

Following are the quantities for one layer of the slice:

  • 110 g Milk
  • 420 g white sugar
  • pinch cream of tartar
  • 85 g desicated coconut

Recipe's preparation

  1. Measure milk, sugar and pinch of cream of tartar into TM bowl.
  2. Cook for 12mins/100C/Speed 2-3


    Do not put MC cover on, place TM basket over lid instead!
  3. Measure coconut in.

    Put MC cover back on and blend for 1min/Speed 4-5.
  4. Scrape down sides and work quickly to pour it into a slice tray lined with baking paper.
  5. Repeat the process for second layer. This time add a couple of drops of pink food colouring (cochineal) at the same time as coconut.
  6. Allow to cool on bench for half an hour and then cool in fridge for at least 1.5hrs before cutting into pieces.

    Store in airtight container in fridge.

Tip

It is really important to remove the MC cover and use the basket instead while cooking the sugar, milk and tartar. Leaving it on keeps too much moisture in.

 

Also, I reccommend rinsing with hot water and detergent between the first and second layer.

    Childhood memories!

    super easy to make, and a perfect result, thanks for a great recipe. My slice tin was a bit big, so I made three layers which looked nice. Nice for Xmas gifting.

    Just like I remembered school fete coconut ice to be. Perfect recipe. So easy to throw together with pantry staples too. I remember mum making it once on the stove top and saying "never again". I only wish we could make it together now in the thermomix 💕

    This was so easy to make & just like the coconut ice I remember eating when I was little.  I just made the top layer green instead of pink because it's for Christmas.

    I love it! I've made 2 batches so far, 1 in the TM31 and 1 in the TM5. Don't bother to rince out the bowl for the second layer as it saves time plus your only adding colouring to create the second layer.

    This really is a grandma recipe. My Nana wrote an almost identical one down for me (minus the thermomix of course!) It's always a winner with the family.
