Ingredients
Halawet El Rez
- 240 g rice, Rinsed well
- 800 g water
- 350-400 g sugar
- 1 tsp Mastika, Crushed
- 1 tbsp Rosewater
- 1 tbsp Orange Blossom Water
- 350-400 g Curd Cheese (sweet cheese), Sliced into 2mm thick slices

- Add rice and water into "Closed lid" and cook for 40min/100°/sp2
- Add sugar and cook for another 5min/100°/sp4. Give a couple of stirs with aid of spatula if sugar does not mix well into the cooked rice.
- Add remaining ingredients and stir for as long as you like depending on how much you like cheese melted through/"Counter-clockwise operation" speed 3.
Tip
If you like your cheese still a little chunky, at step 3 let it stir in reverse for a few seconds, remove mixing bowl lid and stir by hand with your spatula till you achieve your desired cheese consistency.
Garnish with crushed pistachios if desired

Omg this is absolutely amazing my whole family loved it thank you for sharing.
I made this recipe and it didn’t turn out thick like it should. Not sure where I went wrong. I followed the steps exactly as it is.
Hamlaha: Sweet cheese is a mild tasting, low salt cheese, similar to mozzarella. It can be found at most middle eastern grocers.
