- 1 cup Milk
- 1 tsp vanilla essence
- 1/2 cup sugar
- 1/8 tsp salt
- 5 egg yolks

I'm cooking this todayRecipe's preparation
- 1) roughly chop the peaches and sprinkle with 1/2 cup sugar. Set asside for 20-30min. Then blend until smooth. (while waiting 30 min I get on with the rest of it)
- 2) Put all remaining ingredients, except egg yolks, into the thermomix and cook on 95 degrees, for 11 min, speak 1-2
- 3) Take about 1/3 cup of custard mix and slowly dribble this into the egg yolks while whisking contantly (slowly and wisking constantly to prevent custard from cooking the egg yolks). Repeat 1/3 cup at a time 2 more times (total a cup). Then add this to the remainder of the custard mix in the thermomix mix together (about speed 5 for a few seconds or so). Add peach pure and mix again.
- 4) Transfer to fridge for 3-6 hours to cool completely.
- 5) Add the cooled mix to the ice cream maker and churn for approx 20-30 min, until it is getting too firm for the icec cream maker. Transfer to a freezer safe container and apply gladwrap to form a "skin" over the icecream. Freeze for a few hours fo soft-serve consistancy, or overnight for regular icecream.
Tip
You will need an icecream maker.
May like to reduce the sugar in the custard mix.
This was my first try with an ice cream maker and it turned out amazing. It might be worth experimenting with cook times to see if it can be done in shorter cook time etc.
