Recipe's preparation

  1. Put dates, cashews, rapadura and vanilla and coconut into mixing bowl.

    Blend Speed 9 for 10 secs

    Add frozen coconut milk and ice cubes and blend for 20 secs on speed 10

    Scrape down sides of bowl and add cream.

    Blend speed 5-6 for 10 secs

    Serve and Enjoy!

     

  2. If you dont have frozen coconut milk, to maintain coconut flavour, you can increase the coconut to approx 50 grams and use 350 grams of ice.

    Sooo delicious! I used icing sugar instead of rapadura, and 80g pouring cream, which may be why I had to freeze for a further 20 mins, but yummo!

    Delicious.  I got the end and realised I used the cream yesterday so added condensed milk and a dash of normal milk instead.  Quite sweet as a result but the kids didn't complain!

    Made this to put on top layer of Raw Mango and Cashew Dreamcake and it was awesome.  Froze it for an hour after spreading and sprinkled it with Flake for an awesome pretty healthy ice cream cake!  Run a hot knife around the cake before undoing the springform pan.
