Ingredients

For crumble:

  • 300 grams plain flour
  • 200 grams almond meal
  • 175 grams raw sugar
  • 200 grams Butter
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt

For ricotta chocolate filling :

  • 100 grams small dark chocolate chips
  • 100 grams currants or sultanas
  • 500 grams ricotta
  • 1 tablespoon orange or lemon rind, optional

Recipe's preparation

  1. Prepare a 20cm round spring form tin with baking paper on the base.

    Alternatively, use a lamington or slice tin to create a more slice like shape.

    Heat oven to 160 degrees Celsius

     

    For crumble:

    Mix all crumble ingredients for 45 seconds on Speed 3.

    Remove lid and check mixture has crumbled (chunky is good!)

    If not fully combined, scrape sides with spatula and mix again on Speed 3 until desired consistency is reached.

    Filling :

    In a mixing bowl combine all filling ingredients with a spoon.

    Assembly :

    Spoon approximately two thirds of the crumble mix into the base of tin and scoop a little up the sides.

    Spoon all filling into the crumble cavity then spread remaining crumble on top.

    The consistency should be quite crumbly.

    Relax!  It will all hold together with a beautiful crunchy crumble on top.

    I love this cake, it's quick, easy and is delicious warm with cream as dessert or sliced cold from the fridge with a cuppa.  Keeps well in the fridge for days and also freezes well.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

    Wow! A new favourite.  Thank you.

    I've made a non crumble version of this, from an old Italian recipe book, and while nice, it lacks the taste and texture of this beauty.  Although, my crumble mix was perhaps a bit too much, thick, but, delicious.

    I also took the idea from previous recipe and soaked the sultanas in limoncello overnight.  And, then used drained syrup in accompanying whipped cream. Sensational.  I did add the lemon rind to the ricotta mix too.  I did not include the chocolate, just doubled the sultanas.  Next time I may try some other fruity types

    I found the 45 min baking time not long enough, so I increased to 180 and another 20 mins or so.  Perfect, pale brown crusty crumble nicely bonded and soft and fluffy filling. Next time I will start on 180 for 45 mins and see how that goes.  I also used a 23 cm springform, as 20 cm died and it was perfect height, distribution, etc.

     sooo easy and delicious.  A huge hit with our dinner guests, heaps for 8. Cannot thank you enough for this Clarek.

    I really want to try this one, but need to know how long to cook it for tmrc_emoticons.)  tmrc_emoticons.)  It sounds very like one I always ordered at my fave Italian restaurant in the 90s, lol.  It had chopped apricots and pistachios as well and I am sure it included some liqueur too.
