  • 150 grams coconut oil
  • 1 lemon, (juice only)
  • 1 lime, (juice only)
  • 1 teaspoon Stevia powder

Recipe's preparation

  1. 1. Add cream cheese and coconut cream to bowl and mix 20 sec/speed 3-4.  Scrape down sides of mixing bowl with spatula.

     

    2. Add coconut oil and mix 20 sec/speed 3-4. Scrape down sides of mixing bowl with spatula.

     

    3. Add the juice of one lemon and the juice of one lime to the bowl along with 1 small teaspoon of Stevia.  Combine 20 sec/speed3.

     

    4. Spoon into small silicone moulds and place in freezer for an hour or longer.

     

    5. Serve as a dessert with whipped cream or fruit or have as a snack.

Tip

Add or reduce the Stevia Powder to suit your own individual taste.

The mix does taste quite tart but improves with freezing.  If you don't like a lot of lemon/lime simply reduce the quantities.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    OMG these are AMAZING!! I made 1 batch to the recipe above then I made a batch leaving out the stevia and lemon juice and put in a teaspoon of "Avalanche" sugar free drinking chocolate (0.15 carbs) I didn't freeze the second batch and it tastes exactly like chocolate mousse! Yummy!! 

    I love lchf!!

    Thanks, can't wait to try them. I am planning on switching out the Stevia for Maple Syrup.

    FYI With this change each bomb contains 82 calories, 1g Carb, 8g Fat.
