1. Add egg to TM bowl and mix 20 sec/speed 3.5.
2. Add buttermilk, buckwheat flour and salt. Mix for 20-30 sec/speed 6. Rest for 20 minutes.
3. Add coconut oil to a frying pan. Using a large spoon, pour the batter into the pan. At the same time tilt the pan in a circular motion so the batter coats the surface evenly.
4. Cook for approximately 1 minute or until the edges of the crepe start to lift. Using a spatula loosen and flip the crepe to cook the other side for a minute or so.
5. Place cooked crepes on a plate to serve or wire rack to cook and store in an airtight container. Makes 6-8 dinner plate sized crepes.
*To make these a high fat option top with whipped cream and a small amount of fruit or rice malt sryup. If you prefer savoury you can fill with scrambled eggs, bacon and avocado - anything you like really.
Tip
With the thermomix you can easily mill your own buckwheat flour from whole buckwheat which is available from Coles or Woolworths at a much cheaper price than if you were to buy ready prepared buckwheat flour.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Sadly not LCHF compliant. Buckwheat is not low carb. Perhaps a title change?
Buckwheat isn't low carb - 72g per 100g. I would sub it for almond meal.

I made these with a few substitions (due to dietary requirements). I had to replace buttermilk with almond milk and the egg with chia gel. They were really tasty but mine stuck to the pan no matter what I tried. This may have been due to substitutions or might just be my cooking. I'm an extreme novice haha.
