Ingredients

Malay Cake

  • 125g Butter
  • 250g brown sugar
  • 3 eggs
  • 100 ml evaporated milk
  • 1tsp vanilla extract
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 225 g flour

Caramel Sauce

  • 80 g unsalted butter, cut into cubes
  • 130 g evaporated milk
  • 50 g Dark Brown Sugar
  • 50 g sugar
  • 50 g Maple syrup
  • 1 tsp Vanila
  • 1 tsp fine sea salt

Recipe's preparation

    Malay Cake
  1. Place butter in TM and 1 minute 60 degrees/ Speed 3

     

    Insert butterfly

     

    Add sugar and mix 3 min/ Counter-clockwise operation"Counter-clockwise operation" speed 3

     

    Add 1 egg at a time through the lid while mixing  1 minute/ speed 3

     

    Add vanilla and evaporated milk mix 30 seconds / speed 3

     

    If the mixture splits  remove butterfly and mix 5 seconds speed 7

     

    Add flour, baking soda and baking powder

     

    Mix 10 seconds Counter-clockwise operation"Counter-clockwise operation" Speed 5

     

    Pour  1 litre of water in TM bowl and bring to boil 4 minutes/ 100 degrees speed 3

     

    Place a  spoonful in moulds only half way up as they will rise.

    Place moulds in Varoma tray and steam 20  minutes/ Varoma/ Speed 2

     

  2. Caramel Sauce
  3. 1, Place all ingredient into mixing bowl and cook 7min/Varoma/ Sp 2, Placing simmering basket onto mixing bowl lid

    2, Pour warm sauce on malay cake .  

    Transfer the unuse sauce into sealable jar allow to cool at room temperature before placing into refrigirator until ready to use.

Tip

you may need to steam in two batches as this makes a large quantity. Extras can be stored in fridge and reheated in Varoma.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
