- 120 grams Butter
- 150 grams brown sugar
- 120 grams SR flour
- 90 grams Desiccated Coconut

- 225 grams white sugar
- 150 grams water
- 1.5 tablespoons gelatine
- 1-2 drops Food colouring, (Optional)

Preheat oven 180 degrees, line slice tray with non stick baking paper.
Melt butter 90 seconds, 60 degrees speed 1. Add other ingredients and combine 30 seconds speed 3. Transfer mixture into tray and press and smooth using back of a spoon or MC. Bake for 10 mins, remove from oven and allow to cool completely.
To make marshmallow add sugar to mixing bowl and blitz 10 seconds speed 9 MC on. Add water and gelatine then cook 8 mins, 100 degrees speed 2 MC off. Set aside at room temperature to cool. Once cool insert butterfly and add food colouring (if using) and whip for 8 mins speed 4 MC off. You can place simmering basket on top if your concerned about splatter. Pour over pre baked slice base and refrigerate until set.
Slice with a hot, wet knife. Store in refrigerator.

Loafmilk: must have been overdue
Marshmallow set really well. I did let the gelatin sit in the water and sugar for 5 minutes before cooking.
I found the taste of the base too strong to suit the marshmallow, would be a yummy slice on its own.
Absolutely brilliant!!! Perfect thanks for sharing. Very versatile! I had left over blueberry coulis which I dropped on top and swirled through. Also added vanilla bean paste to marshmallow mix.
Took me 3 goes to get this right but worth the effort! The meringue was tricky for me - cool to 45 degrees or below is one tip. Game changer though was I ended up comparing the cookidoo vanilla bean marshmallow recipe and soaking gelatine with water for a few minutes. I added raspberry jam between the biscuit base and marshmallow and it was epic. So satisfying to have thick glossy marshmallow, and it looks and tastes great.
Hello! Keen to try this but just want to ask... are your tablespoons 20mls or 15mls? Just wanted to double check as there are both NZ and Australian recipies on this one site and we have different tablespoon sizes! Want to get this yummy looking recipe right first go!!

My marshmallow is runny. When you say room temperature how long do you leave it for to cool down? I put the marshmallow in the fridge to cool it down more and will try again to fluff it up.
