Ingredients

Cheesecake Base

  • 100 gram Butter
  • 300 gram Chocolate Biscuits, (Choc Ripple or Oreo are my favourite)

Cheesecake Top

  • 110 gram raw sugar
  • 150 gram chocolate, (I use Cadbury)
  • 375 gram Philly Cream Cheese
  • 1 dash vanilla essence
  • 240 gram cream
  • 150 gram Peppermint Chocolate
  • 3 tsp gelatine, (dissolved in 1/4 cup water)

Recipe's preparation

    Cheesecake Base
  1. Melt Butter (mine is always from fridge temperature): 3m30s, 60 °, Speed 1.

  2. Add 300gm biscuits of your choosing (I like Choc Ripple or Oreos) and blend on Speed 6, 5 seconds.  Scrape down side of bowl and blend for another 3 seconds if required.

  3. Press into lined lamington tray (or spring form pan) and refrigerate for 30 minutes.

  4. Cheesecake Topping
  5. No need to wash bowl.  Blitz Sugar for 7 secs, set aside.

  6. Add broken up chocolate pieces and melt 3m, 50 °, Speed 3.

  7. Add cream cheese, sugar and vanilla.  Blend for 20 seconds on Speed 5.

  8. Scrape down sides.  Add cream and blend for 15 seconds on Speed 5.

  9. Add Gelatine that has been dissolved in 1/4 cup (60ml, 60gm) boiling water.  Blend on Speed 5 for 5 seconds.

  10. Add broken up Peppermint chocolate and blend on speed 5 for 5 seconds.  Chocolate should break into smaller pieces and peppermint spread throughout all the topping.

  11. Add to now-solid base and return to refrigerator for 2 hours or until set.

Tip

This is adapted from a Philly recipe but I love LOVE peppermint cheesecake so have been using this as my own for years.  I only just got my Thermomix but I made this and it was so much easier in Thermie, than having to dirty a billion different dishes and pots to melt everything etc.  It can easily be varired for other chocolate flavours, we love adding Oreo's at Step 9 too.

    Im devo, cadbury dont make the mint chip any more, that was a limited eddition!  I even contacted them to find out.  I have now substitued for peppermint crisp but that is quite pricey!  Hope cadbury bring back the mint chip!

    Was quite yummy but a bit firm....maybe I would use a little less gelatin to get a more cheesecake texture.
