Recipe's preparation

    Mousse
  1. Refrigerate a can of coconut milk for at least 24 hours, so that the cream separates from the milk and settles at the top of the tin.

     

    Mill sugar for 20 seconds / speed 9.  Add cacao powder and mill for a further 10 seconds / speed 9.

     

    Scrape down bowl.

     

    Spoon cream out of tin and place in bowl with butterfly.  Whip for 20 seconds / speed 2-3. Scrape down bowl and repeat until you have a mousse like consistency (approximately 2 more times) 

     

Tip

Add more or less sugar and cacao to taste.  

 

If refrigerated, mousse will set. 

 

Using a tin of coconut cream instead of milk will result in a thicker mousse.

    This is delicious! I made this on Wednesday but substitued the 10g of raw cacao powder with 40g of cocoa as I didnt have cacao, and I also used coconut cream that had been sitting in my fridge instead of coconut milk. It was very chocolatey so you could probaby reduce the amount of cocoa you add according to your preffered taste but I will definitely be making this again! Thanks!
