Pear Galette

  • 1 portions Puff pastry, use the Thermo Quick Puff pastry https://cookidoo.com.au/recipes/recipe/en-AU/r66929
  • 5 pears
  • 75 g Maggie Beer Verjuice
  • 65 g Butter
  • 1 heaped tsp lemon thyme, fresh
  • 50 g almond meal
  • 20 g brown sugar
  • 1 egg
  • 25 g plain flour
  • 1 pinch sea salt

Recipe's preparation

  1. Make the Quick Puff as per Thermomix guided cooking
    Quick puff pastry - Cookidoo® – the official Thermomix® recipe platform

    Preheat oven to 220C.
  2. Drizzle pears with a little Verjuice to stop them oxidising.
    Drain any excess Verjuice off pears.
    Place in a fry pan with one table spoon of butter on a high heat and cook for five minutes or until caramelised.
    Once caramelised, deglaze the pears with the remaining Verjuice and a teaspoon of lemon thyme leaves.
  3. Lay out puff pastry on a baking tray lined with baking paper and trim edges to create a circle. Set aside.
  4. Add the almond meal, brown sugar, remaining butter, egg, plain flour and salt to mixing bowl and blend on speed 4 for 5 sec until a smooth paste is formed.
  5. Top the Puff pastry the almond mixture, leaving a two centimetre space from the edge of the pastry.
    Lay the pears on top of the almond mixture.
    Fold the pastry edges in, pinching as you go to ensure the pastry remains in place.
    Place in the oven and cook for 20 minutes or until pastry is golden.
