Ingredients
Crepes
- 120 grams Quinoa Grain
- 50 grams rice
- 3 eggs
- 3 tablespoons honey
- 2 tablespoons coconut oil, Melted
- 300 grams Nut Milk, any nut milk will do
Raspberry Chia Compote
- 300 grams fresh or frozen raspberries
- 3 tablespoons Maple syrup
- 3 tablespoons chia seeds

Combine raspberries and maple syrup in the Thermomix. Cook for 8 minutes speed 4 heat 60 degrees. When done, scrape down the sides, add the chia seeds and mix at speed 1 for 20 seconds. When complete put in a bowl and set aside to cool and 'set'.
Add Quinoa to the mixing bowl and mill for 1 minute, speed 10. Set aside.
Add Rice to the mixing bowl and mill for 1 minute, speed 10.
Add reserved Quinoa mixture and mix the two together for 5 seconds at speed 5.
Add the rest of the ingredients and mix at speed 8 for 20 seconds.
Leave mix and room temp for 20 minutes.
To Cook: Heat a 20 cm fry pan to a reasonably high temp, add a little coconut oil. Once pan is hot enough swirl 1/3 cup of the crepe mixture in it to cover the base of the pan. When cooked enough, flip it and repeat for the other side.
Serve the crepes with natural yoghurt and the raspberry chia compote. You can add some Maple syrup for added sweetness if you like.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. They fell apart for me when I tried to flip them...any suggestions?
Love how the compote has maple syrup and the crepes are gluten free - on the list to make.
