Ingredients

  • 150 grams Coconut Flour
  • 1 level teaspoon baking powder
  • 1/2 level teaspoon bicarbonate soda
  • 1/4 level teaspoon Himalayan Rock Salt
  • 250 grams Butter
  • 150 grams Rapadura (or raw sugar)
  • 1 egg, (I use 67 gram eggs)
  • 1 egg white
  • 1 level teaspoon Vanilla Paste
  • 150 grams Quinoa flakes
  • 150 grams choc chips, (I used cadbury choc bits)

Recipe's preparation

    Preheat the oven to 180C fanforced, Line a baking trays with baking paper.
  1.  

    Add the coconut flour, baking powder, salt and bicarbonate soda to the mixing bowl and stir 3 sec/speed1 and then 

    SET ASIDE

  2.  

    Put the butter and sugar into the mixing bowl and mix 20sec/speed6.

  3.  

    Add the egg and egg white and the vanilla extract and mix 5sec/speed6.

  4.  

     Scrape side of the bowl.

  5.  

    Put on Gentle stir setting and gratually add the flour mixture thru the MC hole,then the quinoa flakes and chocolate chips until its well incorporated.

  6.  

    Using a teaspoon, spoon and roll into balls, place onto baking sheets and gently press down with a fork.

  7.  

    Sprinkle a little amount of sea salt on each cookie and bake for 13-15 min
