  • 130 grams wallnuts
  • 110 grams Dates pitted
  • 1 teaspoon vanilla paste/essence
  • 35 grams Cacao (Raw)

Recipe's preparation

  1. Mill wallnuts and Salt for 10 Seconds Speed 9

  2. Add all remaining ingredients and mix together for 10 sec, sp 9

  3. Scrape down the bowl and mix again for 10 sec sp 9.

  4. While the blades are still running, add a couple drops of water and mix for a further 5 sec sp9.  This is just to make the dough a little wet so it rolls into balls.

  5. Scrape mixture out of the mixing bowl into a clean bowl. Rolls 1 -2 teaspoon amounts into balls. Store in an airtight container in the fridge for up to 1 week.

    I am so glad you all like them I am not sure about the oilyness but mine didn't seem that oily.

    Very easy.  I even forgot to the mill the walnuts first - just put them all in and skipped the first step and they still turned out great.  I haven't used cacao nibs before so this might account for (1) I was a bit surprised by the bitter aftertaste (2) when I rolled the balls they were super oily - is this from the cacao or the walnuts?  I rolled them on paper towels before putting in the fridge.  Also, my recipe made 14 balls so I worked out they are 83 calories each, just in case anyone else is interested.

    Holy moly. These taste exactly like the kind of dark, fudgy brownie I adore. Not too sweet, easy to make and in a small enough quantity that I won't make a total pig of myself on them tmrc_emoticons.;-) I love the note about them lasting up to a week in the fridge - once my husband finds them they won't last a minute!  tmrc_emoticons.)

    I didn't have vanilla paste so I used 8g of vanilla sugar. It worked out fine.
