Ingredients

  • 250 g almonds, soaked in water overnight
  • 260 gdates soaked in juice 2 oranges overnight
  • (Reserve *2 soaked dates for Icing)
  • Zest and juice 1 orange
  • Zest 1 lemon
  • 1 whole nutmeg
  • 3 carrots, chopped into large pieces
  • 1 tspground cinnamon
  • 1 tspground ginger
  • 250 g desiccated coconut
  • 100 g craisins
  • Walnuts to taste
  • Icing Ingredients
  • Zest and juice 1 orange
  • 300 g raw cashews
  • 2 dates, soaked (*see above)
  • 1 tsp vanilla bean, extract
  • 1-2 tbsplemon or orange juice
  • Frozen raspberries and desiccated coconut to serve

Recipe's preparation

  1. Line
    the base of a 23cm spring form pan or fully line a large rectangular baking
    dish with baking paper, coming up over the sides for easy removal.



    Place
    zest and nutmeg into TM bowl and mill for 10
    seconds
    on speed 8.



    Place
    drained almonds and dates (reserving
    liquid from dates
    ) into TM bowl and blend for 30 seconds on speed 5,
    with the aid of the spatula until all comes together. Set aside.



    Place
    carrots into TM bowl and grate for 10
    seconds
    on speed 9 until pulp is
    very fine.



    Add
    reserved liquid from dates and all remaining ingredients except craisins and
    walnuts and mix for 15 seconds on speed 7. You will need to use the
    spatula to assist as the mix is very dense.



    Add
    craisins and walnuts and incorporate by hand with the spatula.



    Press
    into prepared tin and refrigerate for several hours.





    Icing
    Method





    Place
    zest into TM bowl and mill for 10
    seconds
    on speed 9.



    Add
    all remaining ingredients and process for up to 1 minute on speed 6
    until smooth and creamy. Taste and add more dates or lemons juice as necessary.
    Spread on top of cake. Decorate with raspberries and additional coconut.
