- 170 g Shredded Coconut (or dessic)
- 10 medjool dates, pits removed
Topping
- 400 g Natural macadamia kernels
- zest of 1 lemon
- juice of 1 lemon
- 150 g Maple syrup
- 1 tsp Vanilla Bean Paste

Line a slice container (approx 20x30cm) with baking paper.
Mill macadamia kernels and lemon zest for 20 sec/speed 7. Scrape down sides.
Add all remaining ingredients and mix 20 sec/speed 5.
Remove baking paper and slice in approx 4x4cm squares (or as desired). Serve and store frozen (or in fridge).

You can press the mixture into a mini muffin tray if you have time to make them into more fancy lemon bites.
The lemon topping is quite soft, which is the way I like it. If you prefer a firmer topping you can mix in some coconut oil in the last step.
