  • 3/4 cup of dried apricots
  • 3/4 cup of hazelnuts
  • 3/4 cup of brazil nuts
  • 3/4 Cup of sunflower seeds
  • 3/4 cup of raw cacao
  • 3/4 cup Shredded Coconut
  • 2 teaspoons vanilla
  • 2 teaspoons Maple syrup
  • 3 drops peppermint oil (food grade)
  • 3/4 Cup Coconut oil

Recipe's preparation

  1. 1. Line a rectangle or square cake tin with baking paper

  2. 2. Brush baking paper with melted coconut oil 

  3. 3. Place currants, apricots, nuts and seeds into TM Bowl and blitz 6 x 1 sec Turbo

  4. 4. Add cacao, 1/2 cup shredded coconut, vanilla, maple syrup and peppermint oil to mixture in TM bowl.

  5. 5. With blades rotating on Speed 2, pour in melted coconut oil through the lid and allow to mix for 1 min, or until you have a breadcrumb like mixture.

  6. 6. Press mixture into lined tin, scatter remaining shredded coconut on top.

  7. 7. Refrigerate for at least 4 hours to set

  8. 8. Turn out onto a board when set and cut into squares using a very sharp knife. Keep chilled and eat within 5 days (if it lasts that long!)

Tip

This recipe is nutritionally dense and a great 'go-to' if you're craving a sweet fix but not wanting the sugar load that is usually associated. Keep individually wrapped pieces in the freezer for that 3pm pick-me-up.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
