Ingredients

Crust

  • 120 grams freshly shelled walnuts, check for rancidity
  • 1 Lemon peel
  • 100 grams dried figs, remove hard bit of stem
  • 100 grams desicated coconut
  • 10-20 grams honey

Filling

  • 6 dates or apricots, as desired
  • 5-6 crunchy eating apples, cored, halved
  • 50 grams lemon juice
  • few sprigs fresh mint
  • 20 grams walnuts chopped
  • 100 grams coconut cream

Recipe's preparation

    Crust
  1. Place walnuts into TM bowl and pulse chop to leave chunky. Set aside.


    Zest lemon peel 15-20 seconds on Speed 9.


    Add dried figs to bowl and chop for 5 seconds on Speed 7.


    Add coconut and walnuts, and mix in a little honey to just bind, for 3 seconds on Speed 4.


    Press all the above ingredients into a pie plate and leave in refrigerator while preparing the filling.

  3. Place dates or apricots with one apple into TM bowl and chop for 10 seconds on Speed 7.


    Add other apples, pulse chop for 2-3 seconds, add lemon juice, and pulse again for 2 seconds, so that you have a chunky consistency. Take care not to puree.


    Place filling into pie plate, and garnish with a few chopped walnuts, and a serve of coconut cream in the centre with sprig of fresh mint leaves.

Tip

Place tin of coconut cream into fridge to thicken after shaking well.
