Carob Mousse
- 70 grams Californian Medjool Dates, approximately 4 dates
- 2 teaspoons Pure coconut oil
- 10 grams Carob Powder
- 100 grams avocado, 1 small avocado
- 10 grams coconut water
Berry cream
- 70 grams fresh or frozen raspberries
- 170 grams Frozen Bananas
- 2 tablespoons psyllium husks
- 70 grams young coconut flesh
- 2 sprig fresh mint
- 1/2 teaspoon Mesquite Powder, a South American yellow berry

Place dates in TM with coconut oil. Chop for 10 seconds on Speed 6.
Then cook for 5 mins on 100C Speed 1.
Add carob powder, avocado and coconut water and blend on Speed 7 for 40 seconds till a creamy moussy texture.
Place blueberries, banana, coconut flesh and psyllium husks into TM bowl.
Blend for 40 seconds on Speed 7 until a creamy texture.
Garnish with a sprinkle of the mesquite powder and fresh mint leaves.
