Ingredients
Red Velvet Cupcake Batter
- 110 g Butter, softened
- 310 g caster sugar
- 2 eggs
- 290 g self-raising flour
- 1 teaspoon vanilla essence
- 20 g cocoa
- 230 g buttermilk
- 2 tablespoons Red food colouring
Mascarpone Icing
- 250 g Mascarpone cheese
- 240 g cream
- 1/2 teaspoon vanilla essence
- 100 g sugar

1. Insert the Butterfly whisk. Beat the caster sugar, butter and vanilla essence together, 30sec/speed 4.
2. Preheat the oven to 180 degrees (160 fan forced).
3. Add the eggs, one at a time, beating well after each one.
4. In a separate bowl, combine the buttermilk and red food colouring.
5. Add self-raising flour, cocoa, buttermilk and red colouring for 30sec/speed 4 or until combined.
6. Place patty pans into the tray and divide the batter.
7. Bake for 25-30 minutes. You can check if the cupcakes are cooked by placing a sewer into the middle of them and if the sewer comes out clean they're cooked. Leave the cupcakes for 15mins or until completely cool.
1. Beat together Mascarpone cheese and cream 30sec/speed 4.
2. Add Vanilla essence and sugar 30sec/speed 3.
3. Spread/Pipe onto the cooled cupcakes and decorate.
