Ingredients
- 300 g raw sugar
- 50 g 100% Maple Syrup
- 50 g unsalted butter
- 2 heaped teaspoonsnatural vanilla extract
- 2 tsp sea salt
- 500 g cream
- 100 g full cream milk
- 4 eggs
- 150 g dark chocolate, chopped (optional)

I'm cooking this todayRecipe's preparation
Place sugar into TM bowl and pulverise for 10 secs/speed 9.
Add Maple Syrup, butter and vanilla and cook for 15 mins/Varoma temp/speed 1.
Add salt, cream, milk and whisk together for 30 secs/speed 5.
Reduce to speed 4 and introduce eggs one at a time into the hot mixture as the blade rotates.
Cook a further 5 mins/100°C/speed 4.
Pour into cold metal tin and freeze.
After 2-4 hours when partially frozen, remix for 1 min/speed 5-6 to give a creamier
consistency.
Fold through chocolate chunks after remixing on "Counter-clockwise operation" speed 1 for a few seconds.
Pour into cold tin and freeze for up to 12 hours before serving.

Used 200g sugar
It was very soft so maybe the 36hours in freezer was not long enough. It was still very sweet next time I might do 100g sugar and leave for 2 days and nights in freezer. Think it would be a winner if I coukd get is not so soft next time. It is not what I would call a caramel flavour I would call it maple choc chip

Excellent thank you. I think this should be called salted maple butter ice cream (there’s no real caramel flavour). Also I’d prob reduce the sugar content next time. Thanks, I’d make again

Hi, no need for the butterfly whisk. In step 3 where is refers to 'whisk' it is just referring to the term of whisking/mixing things together.

Hi there, I'm just wondering if you need to use the whisk attachment as it says 'whisk together' on step 3 but no reference to the actual whisk attachment?Any feedback is appreciated I want to try & make this over the weekend.
