Ingredients

Base

  • 80 g Butter
  • 200 g plain sweet biscuits, (I used Scotch Finger)

Cheesecake topping

  • 500 g cream cheese
  • 400 g Tin condensed Milk
  • 200 g Salted Caramel Sauce
  • 2 tsp Gelatine powder
  • 50 g Boiling water
  • handful of white choc buttons
  • handful of dark or milk choc buttons

Recipe's preparation

    Base
  1. Snap biscuits in half and add to bowl with butter and mix for 15 seconds speed 6 or until biscuit comes together.

  2. Press biscuit mix into a greased and lined springform cheesecake tin and place in fridge to cool and set. 

  3. Cheesecake topping
  4. Mix gelatine powder with 1/2 MC of boiling water in your MC with a spoon until dissolved, then set aside and allow to cool.

  5. Add cream cheese & condensed milk to bowl and mix 20-25 seconds speed 4 using your butterfly

  6. Add cooled gelatine liquid to cheescake mixture in bowl and mix speed 3 for 5 seconds

  7. Pour 1/3 of cheesecake mixture onto cooled biscuit base

  8. Spoon big dollops of salted caramel sauce on top of the cheesecake mixture in a circle around the outside of the tin, start at 12 o'clock, then 6 o'clock, 3 o'clock, 9 o'clock etc until you have as much as you like

  9. Using your spatula, very gently swirl the caramel through the cheesecake mixture, the more you mix it the less you will taste and the less you will see when you slice the cheesecake.

  10. Pour remaining cheesecake mixture on top and smooth and flatten out the top

  11. Just before cheesecake is completely set, pour the chocolate over the top and gently press it into the cheesecake then put back in fridge until completely set

Tip

I let my cheesecake set overnight, it takes about 2 hrs to set during the day in the fridge.

    Will never make again. I thought 2 tsp of Gelitine sounded too much and it was. my cheesecake was so dense I couldn't eat it. it needed more like lemon or something.

    This is a delightful sweet and you shared do my assignment. I don't think I would have shared. I've finished cheesecake with caramel sauce earlier yet never thought to twirl it on best. Quite delightful! Expectation you have a stunning end of the week.

    The recipe is simple and indeed the best hit for the holidays. Especially some beautiful days with the family. I wrote several reviews on it and sent for the EssayForCollege students recipes contest, hope the description stuns them. Like it was with the essay about pizza that helped a girl be accepted to Yale.

    I made this for Christmas Day - it was a massive hit. The sauce was amazing! Whole family loved this one and it has been requested at the next family get together! Recipe was super simple and easy to follow.

    This was divine! I love cheesecake & this is now one of my faves! My hubby isn't all that keen on cheesecake but even he enjoyed it!  I used strawberries in the middle with the salted caramel sauce & also topped the cake with them, instead of the chocolate! I found the fresh strawberries cut through the sweetness! Can't wait to make it again

    I've made this tonight, so I've not yet tasted it..  I wanted to comment though that the recipe is very simple, I used store bought salted caramel sauce. The only problem I had was that my cream cheese was straight from the fridge so the butterfly did not handle it, I had to remove the butterfly and mix with the blades first, then put the butterfly back in. Other than that, it was all good!
