Ingredients
Silken Tofu Chocolate Cupcakes
- 310 g plain flour
- 60 g cocoa powder
- 1/2 tbsp baking powder
- 1/2 tbsp Bi Carb Soda
- 1/2 tsp salt
- 130 g sugar
- 125 g silken tofu
- 130 g milk or soy milk
- 70 g vegetable oil
- 70 g Maple syrup
- 2 tsp vanilla extract
- 100 g chocolate for melting
Chocolate Icing
- 150 g cream cheese
- 150 g dark chocolate

Preheat oven 180 degrees. Place 12 large cupcake cases into cupcake trays.
Place dark chocolate in mixing bowl and chop pulse 1 sec/"Closed lid" /Turbo. Scrape down side of bowl and heat 6 min/50C/speed 2. Set aside.
Place tofu, milk, oil, maple syrup and vanilla extract into mixing bowl and combine 10 sec/speed 5.
Add melted chocolate to mixture and blend 20 sec/speed 5 until smooth.
Add flour, cocoa, baking powder, bicarb soda, salt and sugar and mix 20 sec/speed 5 or until a silky smooth consistency is reached.
Place mixture into cupcake cases and bake for 12.5 minutes - 13 minutes. Note: do not go over this time as the cupcakes will continue to cook the tofu when cooling.
Turbo chocolate 5 seconds and add cream.
Temper chocolate and cream 6 min/50C/speed 2.
Once mixture is cooled slightly, pour onto cool cupcakes and allow to set.

I really liked these. They really pack a chocolate punch! I would say that yes they're a lot like a mudcake in texture and denisty. I will be making them again!
These were great. Really moist and were more like a mud cake.
Oops. I misread carb soda and baking powder as half a teaspoon instead of half a tablespoon. The result was a stodgy gooey mess, but tasted good. Will have another go one day.
