- 250 grams white chocolate
- 20 grams cranberries, dried
- 3 heaped tablespoons vodka
- 60 grams thickened cream
- 30 grams Butter
- 3 teaspoons lime zest
- 250 grams white melts, extra
- 20 grams copha (optional)

Place cranberries in bowl for 2 seconds on speed 9 and set aside in a large bowl. (no need to clean bowl) Break pieces of white chocolate in bowl and grate for 5-10 secs on speed 8. Add butter and cream and melt for 2 minutes at 50 degrees on speed 3. Pour mixture in with cranberries. Add vodka, lime zest and mix with wooden spoon. Cover with cling wrap, refrigerate approx 30 mins or until mixture is thickened but not set.
Place a teaspoon of mixture on wet hands (water) and gently roll into a ball. Place on baking paper. Refrigerate for min. for 15 -30 mins.
Melt white melts (extra) with copha for 2 minutes at 50 degrees on speed 3. Drop a ball quickly into the melted chocolate and use 2 folks to gently lift to allow the chocolate to drip off. Place on baking paper to dry and refrigerate. Once dried, carefully lift them off and transfer them into mini cupcake liners or on in plastic container. Store in refrigerator.

Tip
Best to keep the melted chocolate in the bowl so chocolate doesnt harden.
Use a sharp knife to clean up the edges one the truffles are dried before transferring them into liners.
