Sticky Date Puddings
Caramel Sauce
- 150 g Soft brown sugar
- 100 g unsalted butter plus extra for greasing
- 250 g double / thickened cream
- 1 tbsp bourbon
- 1 tsp Vanilla Bean Paste
- 1 tsp salt
Sticky date puddings
- 200 g dates, stones removed
- 250 g Boiling water
- 1 tsp bicarbonate of soda
- 60 g Soft brown sugar
- 60 g Butter, in small chunks
- 150 g plain flour
- 2 tsp baking powder
- 2 eggs, large
- 1 tsp Vanilla Bean Paste

- Place brown sugar, butter, cream, bourbon, vanilla paste and salt in "Closed lid" then cook for 7min/80°/Speed 3. Transfer to a warmed Thermi Serverbowl and set aside while you make the puddings.
- Place dates, boiling water and bicarbonate of soda in the "Closed lid" and allow to stand for 5 minutes. Add the sugar and butter then chop 10 sec/ speed 6. Scrape down the sides of the mixing bowl with spatula.
- Add flour, baking powder, eggs and vanilla paste then mix for 10 sec/ speed 4.
- Scrape down the sides of the mixing bowl with spatula.Mix again for 5 sec/ speed 4.
- Grease 8 dariole moulds with butter and place 1 date in the bottom of each. Pour the mixture leaving the mixture approximately 1cm from the top. Place the dariole moulds into the varoma dish.
- Place 500g water in the "Closed lid" . Place the varoma containing the puddings into position. Steam for 25 min / Varoma/ Speed 2.
- Turn out the indivifual puddings onto serving plates and top with caramel sauce and / or cream, icecream.
- FOR LARGE STEAM BASIN - place 1000g water into mixing bowl. Secure Varoma lid with pudding inside.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
