Ingredients
Super Food Snack Balls
- 50 g rolled oats
- 25 g quinoa
- 75 g dried apricots
- 75 g craisins
- 1.5 tablespoons Mesquite Powder
- 1 tablespoon cacoa power
- 2 tablespoons chia seeds
- 1.5 --- cups air popped popcorn
- 2 tablespoons desicated coconut
- 5 tablespoons honey

Add oats and quinoa to Thermomix bowl and chop for 5 seconds speed 5
Add dried apricots & craisins and chop for 5 seconds speed 5
Add mesquite, cacao, chia, coconut and chop for 5 seconds speed 5.
Add popcorn, lock lid, turbo 8 times.
Add honey until able to press together between thumb and fingers.
Roll into balls and refrigerate.

Possible variations
Replace quinoa with more rolled oats
Add more honey and roll in coconut
Replace dried apricots with dates
If not used for a school environment you could add nuts and LSA.

These are great for me. I'm breastfeeding so need something that will sustain me quickly. I changed the mesquite powder to brewer's yeast which makes them great lactation balls thank you!

Just made these today. I didn't have popcorn So used almonds. Also,mesquite powder... Had no idea what that was so used a bit of protein powder. Pretty yummy but a tad sticky from the honey.
As an update - they were much nicer the next day after being refrigerated overnight.
The ingredients cost $60 and they were dry, bitter and not very tasty. Not sure what to do with Mesquite powder now - could not buy any ingredients in small quantities.
The family loved them!
I replaced the popcorn with puffed corn, the cacao with cocoa, and the mesquite powder with quinoa flour and they are still delicious. I found I needed to chop at a faster speed and for longer at step 2.
Mesquite powder or flour
