Ingredients
Risotto
- 325 grams arborio rice
- 2 vanilla pods, Halved and sliced down the middle
- 60 grams raw sugar
- 60 grams unsalted butter
- 100 grams Rose or White Wine
- 800 grams Milk
- 100 grams White Chocolate Buttons
- Dark Chocolate Buttons
- mint, Handful
- pistaschios, Handful
Reduction
- 8 cardamon pods
- 6-8 Firm, ripe pears, Peeled and quartered
- 200 grams White Wine or Rose
- 100 grams water
- 100 grams Rose Petal Jam, Available at good European Delis

Add butter, sugar and vanilla pods to the bowl and saute 3min/120deg/speed 1
Insert Butterfly whisk. Add rice and saute 1min/120deg/"Counter-clockwise operation" .
Add White wine and saute 2min/Varoma/"Counter-clockwise operation" /speed 1.5. Without the measuring cup.
Add milk. Cook 13min/100deg/"Counter-clockwise operation" /1.5, placing simmering basket instead of measuring cup.
Transfer to Thermo Server, stirring through White Chocolate and shredded mint
Turbo Pistaschio nuts 0.5 sec. once. Set aside
Add cardamon and bruise on speed5/4sec.
Pour wine, water, Rose Petal jam into the jug.
Place simmering basket with pears into jug. Poach 20min/Varoma/speed 2.
Remove simmering basket and pears.
Reduce liquid 15min/Varoma/speed 2. if required cook another 5 min.
Place a couple of Darck Chocolate buttons on the base of individual bowls covering with a portion of Risotto arrange pears and pour reduction onto Risotto. Sprinkle with cardamon.

To avoid pears browning, marinade in the reduction liquid prior to cooking.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
