Ingredients

  • 2 red capsicum, Medium
  • 2 onions, brown, Medium
  • 2 garlic cloves
  • 400 grams tomatoes, Fresh or Tinned
  • 250 grams cream
  • 1 heaped teaspoon Vege Stock Concentrate or chicken stock

Recipe's preparation

  1. Preheat oven to 220deg C. Line baking tray with baking paper.

     

  2. Cut capsicum and onion in half.

  3. Place cut side down on baking tray and bake for 10min. 

  4. Reduce heat to 150deg and bake for a further 40-50min or until vegetables are soft. 

     

  5. Place vegetables in a plastic bag and set aside to cool; this makes them easier to peel.

  6. Peel capsicum and onions.

     

  7. Place capsicum and onion with garlic into TM bowl add oil and sauté for on 100deg, 2min, speed 1.

     

  8. Add tomatoes and stock, cook 90deg, 10min, speed 2.

     

  9. Add cream and slowly turn up speed to speed 9 for 20sec.

    Delicious!!!! I didn't put the capsicum or onion in the oven as i was short on time so just sauteed it for 5 mins. Absolutely loved it tmrc_emoticons.)

    Yummy, I only added about 100 ml cream but just enough to take tart edge off. Surprisingly filling too. Recipe doesn't mention how much oil.
