  • 60 grams unsalted butter

Recipe's preparation

  1. Using a grater or zester, remove the zest from the lemons and place into TM bowl.

    Juice the lemons into the TM bowl ensuring no pips land in bowl

    Add eggs and sugar and combine, 5 seconds, speed 3.

    Finally add butter and set time 25 minutes, 70 degrees, gentle stir.

    Curd must be heated to 70c to kill bacteria but allowing it to come to a simmer (or increasing the temperature) will cause curdling so do not increase temperature. 

    Once heat time has completed, strain through a sieve into a sterilized jar and store in fridge.

    Curd will be runny when hot but will firm up when cooled.

     

Tip

for more zing add additional lemon zest and juice and 1 additional egg but don't add extra sugar

    Lovely lemon curd which was very quick and easy to make.   I didn't strain it so I did have some strings of egg white however it tastes great.

    Hi thanks for the feedback! I have updated the instructions to show the butter instead of the sugar twice and increased the cooking time to assist with the thickening.  I had never actually timed the cooking for the curd so took a guess.  I just keep checking it until I am happy so you are probably correct, 30 min is probably more accurate for the thicker curd.

    Hi Naomi Sorry I had sugar in the instructions twice.  Add the butter after combining the egg and sugar.  Recipe has been updated.  Hope that helps

    I made this this morning- was in the fridge all day but remained extremely runny. I have just re-heated at medium heat in a saucepan for about 10 minutes and it thickened up perfectly. I'll be adding the extra cooking time in the tmx next time. Lovely flavour, thanks for sharing.

    PS- the recipe method needs to be edited as sugar is mentioned twice and butter is missing.
