Dark Chocolate Ganache
- 1000 g dark chocolate, min 75% cocoa and ensure chocolate is roughly chopped or small buttons
- 500 g cream, single pouring cream or 35% thickened cream

Place cream in TM bowl. Set time 5 minutes, 90 degrees, speed 2.
Add chocolate to TM bowl. Set time 3 minutes, 90 degrees, speed 3. Repeat this step if required if chocolate is not completely melted.
Ganache should be completely smooth and silky.
Use immediately or store in a sealed container for 1 week.
Ganache can also be stored in a sealed container and frozen.
Tip
Dark chocolate ganache is a 1:2 measurement. To make a larger or smaller batch just ensure your chocolate measurement is double your cream measurement.

My go to method for ganache - works super well under rolled fondant
No its not your tablet as I have found it missing too on my laptop - so what is the speed please or do we assume its speed 2 as in step 1?
Is it just my tablet or is the mixing speed missing from step 2?
For what it's worth, I haven't had luck cooking with organic chocolate. It cracked when I was making flourless cakes. Bought the usual cooking chocolate and they turned out perfect.
I must be doing something wrong? I've just wasted $8 of organic chocolate trying to make ganache - it's split and unusable - I follwed the recipe to the letter?

I halved this recipe and used a mixture of dark and milk chocolate, still worked great. It's very rich but I had it with berries and cream, yummo
Works perfectly!! I made milk chocolate ganache and also white. For white you need - 225mL cream & 700g white chocolate.
