200 gm Desiccated Coconut Organic/Unsweetened

  • 1/2 teaspoon Himalayan salt (or rock salt)
  • 1 Seeded date

Recipe's preparation

    You will need a nut bag or muslin cloth to strain
  1. Place coconut, salt and date into bowl. Mill 30 seconds Speed 7

     

    Add 1200 gm water. Cook 9 minutes/100 degrees/Speed 3-4

    Make sure it gets to temperature and there is steam coming out around MC

     

    Puree by taking Speed up slowly to 5, and let it gain momentum then gradually increase to speed 9

    Puree on Speed 9 for 30 seconds. 

     

    Strain through a nut bag or muslin cloth.

     

    Use the pulp to make a less creamy milk (as above) for cooking or dry out and mill for flour (if not using straightaway, keep in freezer)

     

Tip

Can use fresh coconut flesh without skin, cut into small pieces 200gm to 600gm water.

    i never buy coconut milk for cooking anymore thanks to this recipe - nobody notices the difference and its one less thing to have to buy at the shops seeing as we always have the des. coconut all the time anyway.  Thanks for sharing!

    Wow - love this recipe!

    worked a treat - after draining through nut bag/ clean chux - I put it in a 'pickodell?' /Tupperware container (used for olives and gherkins etc with a built in drainer). I needed the space in fridge - it was great... Separated the cream nicely when it settled/ easy to get to...

    i dried the leftover pulp (dried in oven & blitzed to make flour) and used 1/2 cup with 1 tsp baking power (in place of 1/2 cup of SR Flour) in Coconut Malibu cake...

    Loving the versatility of the thermomix! Makes the most out of everything!

    (A 'chux' cloth worked fine instead of 'nutbag')...

    i used a dried date (just check for 'no seed)... worked great!

    I'm really pleased with this little recipe, it's going in my collection. I used the steaming basket to put my cloth inside and then propped the basket inside a bowl to let it drain. Works a treat! I also am happy with the flour that comes off it.

    Easy, quick, very economical, especially using the pulp for flour or extra lite milk.
