Ingredients
Merryl's Family Chocolate Cake
- 400 grams sugar, Original recipe 3 cups = 660 gm
- 500 grams water
- 250 grams Butter
- 50 grams cocoa powder
- 375 grams Self Raising Flour
- 4 eggs
- 1 level teaspoon bicarb soda, bicarbonate or baking soda
Chocolate Fudge Frosting
- 440 grams Raw or White Sugar, or 310 grams icing sugar
- 90 grams Butter
- 50 grams cocoa powder
- 70 grams water

- Mill Sugar
1. For Cake
Add 400 gms sugar to TM bowl.
Mill 3 seconds, speed 10
Set aside.
2. For Frosting
Add 440 gms sugar to TM bowl.
Mill 10-15 seconds, speed 10
Set aside separately
No need to wash TM bowl. - Cake Mix
Weigh in 400 gms sugar, 500 gms water, 250 grams butter, 50 gms cocoa powder and 1 teaspoon of bicarb soda in TM bowl.
Cook 8-10 minutes, 100 deg, speed 3.5 (use that speed to prevent mixture boiling over) Sugar will be dissolved.
While this is heating, turn oven on to 180 deg C and prepare cake tin. The 23 cm round Thermomix springform cake tin is perfect. I line the bottom of tin with paper and grease sides.
While TM is still going on speed 4, add 50 gms cocoa powder through hole in lid. Weigh in 375 gm flour and 4 eggs.
Mix 1 minute on speed 4.5, scrape down sides of TM bowl and Mix 30 seconds, speed 4.5
Make sure mixture is smooth.
Place mixture in prepared cake tin.
Bake in 180 deg C oven for 50-60 mins - Chocolate Fudge Frosting
Weigh in 90 gm butter, 110 gm sugar, 70 gms water Cook 5 minutes 100 deg, speed 4 to dissolve sugar (Keep the rest of the sugar to add later) Set time for 1 minute 30 seconds , speed 4 and while TM is mixing, add 50 gms cocoa powder though the hole in the lid. Continue to gradually add icing sugar. Scrape down well and mix for 30 seconds on speed 4.
Make you frosting is mixed well. Place in frig and cool.
When cold stir with spatula and ice cooled cake.
Mill Sugar if not using prepared caster and icing sugars
Tip
As I did, youcan adjust the sugar,
If you have a hot oven use lower temperature.
I place some wet paper towel in foil around my tin while I am baking to ensure it cooks evenly

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
