Ingredients

Bananas

  • 380 grams Ripe banana, 3-4 bananas cut in pieces
  • 60 grams Butter
  • 125 grams brown sugar
  • 2 eggs
  • 80 grams Milk, Could use other milks or water
  • 340 grams plain flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon Bi-carb soda

Recipe's preparation

    Turn oven on to 180 & Grease loaf tin.
  1. Cut butter in pieces and place in TM bowl.

    Melt 2-3 minutes 50 degrees, Speed 2

     

    Add sliced bananas & Mash 3-5 seconds, Speed 6

    Scrape down sides of TM bowl.

     

    Add eggs and Mix 20 seconds, Speed 4

     

    Add milk, sugar, baking powder, bi-carb soda, salt & flour,

    Mix 1 minute, Speed 4

    May need to scrape down sides of TM bowl and mix another 10 seconds on Speed 4

     

    Bake 40 - 50 minutes. Is cooked when skewer comes out clean.

Tip

Let cool before you cut it

Optional Can add 1 teaspoon of cinnamon

    Hi There tmrc_emoticons.-) I am trying to eliminate dairy from my daughters diet, only just starting so don't really know how it all works, would you substitute the butter for oil? Thanks in advance tmrc_emoticons.-)

    made this yesterday and the kids loved it.  It rose very well.  I cooked it for the full 50 minutes and it was a little dense at the bottom but it didn't bother us at all!

    Really yummy, I swapped some of the flour for coconut flour and lessened the sugar too.

    Love this recipe, made in my house at least fortnightly. Not to sweet with half the sugar of most other recipes. A treat with a coffee & no guilt!  Big Smile

    Lovely recipe  - just right amount of sugar. I've made this twice now, the second time using wholemeal spelt flour and no eggs. It was more dense but still yummy. Great for the school lunchbox!
