- 2 fillet barramundi, (or other firm fleshed fish)
- 1 red chilli, halved
- 1 clove garlic, peeled
- 1 cm Cube of Ginger, peeled
- 1 litre water
- 1 bunch asparagus, rough ends snapped off
- 2-3 bunch Bok Choy/Pak Choy, pulled off the stem
- 1 carrot, peeled with a vegetable peeler
- 1 tbsp soy sauce
- 1/2 tsp sesame oil
- 1 stalk coriander

1. Wet baking paper and scrunch, place on the top varoma tray making sure it will catch all the liquid but allow steam to come up.
2. Place fish fillets on the baking paper & set aside.
3. Place chilli, garlic & ginger into the bowl and chop for 5 sec / spd 7.
4. Tip mixture over fish, some on the fish & some on the baking paper is ok.
5. Add 1 litre of water the bowl and heat 10 mins / Varoma / spd 3 - this is to get the heating started so less wait time.
6. While the water is coming to the boil, snap the tough ends off your asparagus and pop the good part in the Varoma bowl.
7. Pull apart the bok choy/pak choy and put those on top.
8. Peel your carrot/s and then use the vegetable peeler to make longs strands & they go on top of the bok choy/pak choy.
9. Place the Varoma tray onto the Varoma bowl, sprinkle soy sauce around the fish (doesn't need to be directly on the fish) and the sesame sauce over all of it.
10. Roughly chop 1 stalk of coriander, put the leaves on the top of the fish & the stalks in with the soy sauce.
11. By this time the water should be at or close to Varoma temperature.
12. Place your varoma bowl on top & cook for 15 minutes / Varoma / spd 3.
13. Place the veges on the plate, add the fish & then pour the sauce off the baking paper over it all.
Tip
Other vegetables you could add are spring onions or peeled zucchini.
You could use oyster sauce instead of soy sauce if you wish.
Serve with fresh bean sprouts.
If you wish to serve it with rice, get that started & add the fish and vegetables in the last 10-12 minutes.
This could easily be doubled to serve a family, you may need to increase cooking time by 20% (12-14 mins instead).

Made the fish component tonight (didn't have the Asian veges) I loved it! Hubby would prefer his fish grilled/fried, but this has awesome flavour. Will try again with the vegies suggested, very quick & easy!
