Ingredients

  • 10 g fresh chives, plus extra, chopped, to garnish
  • 2 eschalots, peeled
  • 30 g Butter, (see general tips)
  • 330 g dry cider
  • 600 g fresh clams or pipis, cleaned and washed
  • 100 g Pouring Cream
  • Freshly ground black pepper, to taste

Recipe's preparation

  1. Place chives into mixing bowl and chop 3 sec/speed 7. Set aside.

  2. Place eschalots into mixing bowl and chop 3 sec/speed 7. Scrape down sides of bowl.

  3. Add butter and sauté 3 min/Varoma/speed 1

  4. Add cider and reduce 10 min/Varoma/speed 1 with MC removed and basket on mixing bowl lid.

  5. Put clams onto Varoma dish and place Varoma into position. Steam 11 min/Varoma/speed 2, or until clams just open. Set aside.

  6. Add cream and reserved chives to mixing bowl and warm 3 min/80°C/speed 1.

  7. Pour sauce over clams, garnish with extra chives and pepper and serve.

This recipe can be made using any variety of clams or pipis. Bear in mind that steaming time may vary depending on the size of the clams.
If only some of the clams have opened up, use the spatula to move the clams around in the Varoma dish and steam for another 1-3 minutes until all are opened. If only a few clams are still closed after this time, stop cooking and discard the unopened clams.
As this recipe produces a lot of sauce, you may prefer to serve the clams in bowls with bread on the side, and mop up the sauce with the bread or serve the extra sauce in a jug so people can pour over extra to preference. Alternatively, you can reserve the sauce to use on pasta or rice at a later date.

    Enjoyed this but next time I would give the Clams only 9 mins and check.  Ate with mashed potato cooked first & kept warm in Thermoserver & salad on the side.
