Ingredients

Prawn Risotto

  • 2 carrots
  • 1 stick Celery
  • 4 mushrooms
  • 4 cloves garlic
  • parsley to taste
  • 50 g olive oil
  • 400 g rice, i use mixture aborio and basmati
  • 2 teaspoons TMX veggie stock
  • 180 g cream cheese
  • 900 g water
  • 400 g prawns - uncooked, Pref shelled so you don't get bits of shell in risotto!
  • 100 g white wine
  • 140 g cream

Recipe's preparation

  1.  Put vegetables, garlic and parsley in TMX process speed 7 for 5 seconds.

  2. Add oil and sauté for 3mins at 100, speed 1, MC off.

  3. Insert butterfly. Add wine and rice, cook  2 mins reverse speed soft 100degrees.

  4. Add stock, cream cheese, cream and water (and prawns if still frozen).

    Cook 20 mins, reverse speed soft at 100degrees, with basket in place of measuring cup. If prawns are completely thawed, add after 6 mins.

  5. Pour into thermoserver and wait 5 mins (or longer), then serve.

Tip

I also added one teaspoon of Superfoods vegie powder after the vegies were chopped, because I had some. You could add an assortment of other veggies, these were just what I had on hand and wanted to try

    tmrc_emoticons.) Thanks Jells, glad you enjoyed it. My hubby adds chilli too, but I can't eat chilli. We also add a bit of parmensan and pepper, but everyone adds their own to taste. I have tried it with a marinara mix and that worked just as well. tmrc_emoticons.-)

    Wow. Sensational. Absolutely yummo. Kids loved it. But I added a little bit of Parmesan cheese and salt and pepper to taste. For my hubby he added some chilli flakes I had milled in the thermomix. Sensational. Will  add some fish and squid to it next time   But definetly a winner!!!

    Well there was lots of liquid since I did it when the recipe wasnt fixed. All good its kinda a soup and tastes great. We still ate it so no loss.

    So sorry for the lack of clarity, this was the first recipe I added to the forum and I had some trouble entering it and somehow left them out. I think it is all fixed now. Thanks for asking, until I read this, I hadn't realised it wasn't right.
