Ingredients

Steamed Fish with Mushroom by Levi

  • 5 pieces garlic cloves
  • 10 grams ginger, thinly slice (like matches)
  • 15 grams oil
  • 15 grams fish sauce
  • 15 grams soy sauce, light
  • 10 grams shaoxing wine
  • 6 grams sesame oil
  • 2 grams Mushroom Bouillon
  • 5 grams white sugar
  • 1/4 teaspoon ground white pepper
  • 100 grams Drinking water
  • 4 pieces fresh shiitake mushrooms, thinly slice
  • 1/2 piece Fresh lime
  • 2 pieces red chili, slice at 45 degree angle
  • 1 piece leek, slice at 45 degree angle
  • 500 grams tap water, (for steaming)
  • 10 grams squeeze of lime, (for steaming)

Recipe's preparation

  1. Rub the fish with 1/2 piece fresh lime and cut the fish' body at a 45-degree angle several times on each side

  2. Insert 5 pieces garlic cloves. Chop 3 sec / sp. 5

  3. Add 10 grams Ginger and 15 grams oil. Cook 3 min / 120 C / sp. 1

  4. Pour 15 grams fish sauce, 15 grams soy sauce, 10 grams Shaoxing wine, 6 grams Sesame oil, 2 grams Mushroom bouillon, 5 grams white sugar, 1/4 teaspoon ground white pepper, 100 grams drinking water. Mix 5 sec / sp. 2

  5. Add 4 pieces fresh shiitake mushrooms. Cook 2 min / 100 C / reverse / sp. spoon

  6. Place fish on a steaming tray in varoma basket, then pour the sauce onto the fish. Garnish with 2 pieces red chili and 1 piece leek. Fill the mixing bowl with 500 grams tap water and 10 grams squeeze of lime. Place varoma basket on top of the mixing bowl lid and steam 25 min / varoma / speed 1
