Ingredients
All in one version of Lala's creamy garlic butter chicken recipe
- 50 g Parmesan cheese
- 6 cloves garlic
- 40 g Butter, (Nuttalex dairy free option)
- 1-2 tablespoons Vegetable stock paste
- 400ml water
- 55 g lemon juice
- 1 tablespoons dried thyme
- 270 g coconut cream
- 6-8 chicken thighs, Can use chicken fillet cut into thirds
- 1 tablespoons paprika
- Salt and pepper, to taste
- vegetables for bake, ie. broccoli, zucchini, cheery tomatoes, corn, mushrooms, potato
- 2 cups Aborio Rice
- 1 tablespoons cornflour
- 2 tablespoons water, to mix with cornflour

- 1. Preheat oven to 200 degrees
2. Place parmesan in mixing bowl. Grate 10 seconds/ speed 9. Put aside in a bowl.
3. Add garlic to mixing bowl. Chop 3 seconds/ speed 7.
4. Scrape down sides of bowl.
5. Add butter. Melt 40 seconds / 50 degrees / speed 4.
6. Add vegetable stock paste, water, coconut cream, lemon juice, dried thyme and parmesan cheese to mixing bowl. Cook 10min / 100 degrees / speed 2.
7. While the sauce is cooking prepare and season the chicken in a bowl. Add paprika, salt and pepper. Mix well
8. Add corn flour and water (2tbsp ) to a measuring cup. Mix well then add to sauce once cooked. Cook for a further 1 min/ 100 degrees / speed 2 to thicken.
9. Place aborio rice in deep baking dish. Add chosen vegetables.
10. Pour half the sauce over rice and veg and stir well. Add raw chicken and the rest of the sauce. Mix well to coat everything.
You may need to bake in two seperate dishes to avoid overfilling the dish. Aim for three quaters full.
11. Bake in oven for 40 min or until chicken is cooked through.

Tip
Dairy free- leave out parmesan and use Nuttalex for butter
Vegetarian- omit chicken and use plenty of veggies
Veggies can be whatever you have in your fridge / pantry to use up. I.e mushrooms, capsicum, sweet potato, potato, cherry tomatoes, broccoli, zucchini, broccolini, corn etc.
