Ingredients

French Onion Soup

  • 500 grams onions, peeled and cut in half
  • 2 cloves garlic, peeled
  • 50 grams olive oil
  • 1 tablespoon balsamic vinegar
  • 30 grams brown sugar
  • 90 grams red wine
  • 1 tablespoon plain flour
  • 750 grams water
  • 2 tablespoons Vegetable stock paste, from EDC

Apricot Chicken

  • 2 chicken breasts, cut into bite sized pieces
  • 120 grams dried apricots, cut into halves
  • 400ml can of Apricot nectar
  • 1 tablespoon vegetable stock, from EDC
  • 150 grams French Onion Soup
  • salt and pepper to taste

Boiled Rice

  • 1000 grams water
  • 1 tsp salt
  • 20 grams olive oil
  • 350 grams long grain white rice

Recipe's preparation

    To make the French Onion Soup
  1. 1. Place garlic and onion into TM bowl. Chop 4 second / speed 5

    2. Add olive oil and balsamic vinegar and saute 20 mins/ Varoma /Reverse/ Speed 1.

    3. Add brown sugar and red wine and saute 15 mins/ Varoma/reverse/ speed 1.

    4. Add flour and cook 2 mins/100 degrees/reverse/speed 1.

    5. Add water and stock into TM bowl and chicken breast into the Varoma and cook 20 mins / Varoma / Speed 2. Check chicken and cook for longer if required.

    6. Pour soup from the TM bowl into the Thermoserver, 150g will be used for the Apricot chicken, the rest could be frozen for next time.

     

     

     

     

     

  2. To make the Apricot Chicken
  3. 1. Add apricots, apricot nectar, vegetable stock, salt, pepper and French onion soup to TM bowl and cook 15 minutes /100 deg / Reverse /speed 1.

    2. Pour into Thermoserver

  4. To make the boiled rice
  5. 1. Place water, salt and olive oil into mixing bowl. Insert simmering basket and cook 20 min / 100 deg/ Speed 4.

    2. Serve Apricot chicken and Rice.

    I love this recipe . I make the onion soup then freeze it in a few portions . The best way to make it is in the slow cooker with the onion soup, and add all other ingredients. I add about 1kg chicken thigh, veggies plus some sweet potato to thicken it up and after 4-6 hours it’s DELICIOUS!

    Made this last tonight. We are having it today but the taste test proved lovely. I love the fact that the soup was made for this recipe and as others have said, with elftovers to pop into the freezer (if hibby doesn;t eat them first as it is still in the fridge. I do like a little thicker sauce though (personal preferfence) so next time I might add a little cornflour slurry.Thanks for a great recipe tmrc_emoticons.)

    150g french onion soup mix... is this a 40g packet made up like the instructions on the packet and then add 150g of to this recipe? Or Do I the 40g packet to this recipe?

    Amazing recipe - I doubled the chicken (so used 4 chicken breasts) and I also doubled the sauce and added 3 tbs of flour to thicken it up a bit. I served it with mashed potato, corn on the cob done in the oven and I also steamed sliced carrots and green beans in the varoma at the same time as the chicken.

    I put the chicken from the varoma into the thermomix in Step 1 of the Apricot Chicken part and it turned out just right.

    I have frozen the leftover french onion soup in portions so it will be a quick dinner to make next time.

    A big hit all round in our house last night - thank you for this recipe - I will definitely be making it again!

    Great recipe, delicious. I was a bit unsure when to add the cooked chicken pieces to the sauce...do you add to the sauce then cook the final 15min or add after sauce is cooked when putting on rice?

    Many thanks for this recipe...the soup part is excellent...as I had alot left over the next time I made it I used double ie 300g for the french onion soup 140g apricots cut in halves and 1 Tbs of rice flour to thicken the mixture in the last 20 mins of cooking..this tasted so much better the second time I made it.  tmrc_emoticons.)

    Made this tonight and very yummy....one question ( probably a dumb one!) but do I put the rice in the simmering basket or in bowl with water etc??  MC cup off or on?  Thanks
