Ingredients
- 70 g Cashews, toasted
- 1 clove garlic, peeled
- 140 g yoghurt
- 1/2 tablespoon lemon juice, fresh
- 1 tsp ground tumeric
- 1 tsp garam masala
- 1 tsp ground cumin
- 2 cm ginger, peeled
- 500 g chicken breast, diced
- 1 small onion, peeled & quartered
- 10 g olive oil
- 20 g Butter
- 4 cardamom pods
- 1/2 stick cinnamon
- 1 bay leaf
- 1 tsp paprika
- 200 g crushed tomatoes
- 1 tablespoons tomato paste
- 1 portion Continental chicken stock
- 75 g water

Grind cashews - 10 seconds, speed 7.
Set aside.
Mince garlic and ginger - 3 seconds, speed 6. Scrape down bowl sides
Add 40g yoghurt, lemon juice, turmeric, garam masala and cumin. Mix - 5 seconds, speed 5.
Place into a glass bowl with the chicken and mix.
Allow to marinade for about 1 hour.
Do not clean TM bowl before starting Main Recipe.
Chop onion - 3 seconds, speed 5. Scrape down bowl sides
Add oil, butter, cardamon pods, cinnamon stick and bay leaf. Cook - 5 minutes, varoma, speed 1.
Add paprika, crushed tomatoes, tomato paste, ground cashews, water and chicken stock. Cook - 3 minutes, 100*C, speed 1.
Blend - 60 seconds, speed 10.
Add chicken and 100g yoghurt. Mix with spatula. Cook 15 minutes, "Counter-clockwise operation" , 100*C, "Gentle stir setting" .

Trying to convince my brother-in-law that he needed to buy my sister a thermo, we had to make butter chicken that tasted like the takeaway stuff.
Well this met the brief perfectly. We didn’t have cardamom so just omitted it. Also had no yogurt so used milk instead and it turned out perfect.
This is our go to butter chicken from now on.
I absolutley love this recipe, and its become a hit with both my family and the inlaws
I have made it qute a few time but I have found that adding extra yoghurt to the marinade gives it a creamier flavor, which we love
I put in the whole 140g that the recipe calls for into the marinade han add the extra 100 the the main recipe aswell!!!
This is a staple recipe in our household now!!!

Fantastic recipe thank you! An even bigger turn up for the books - our kids ate it! No offence but admittedly I did make a couple of tweaks by using 400 g tin tomatoes, only 2 cardamom pods & omitted cinnamon stick (as I'm not a lover of that flavour). Might have toned the taste down slightly
Blending on 60 secs was indeed correct but naturally we all remember to increase that speed gradually (when blending hot liquids).

Loved this, and first time the chicken stayed in cubes for me. I added a 400g can of coconut milk as I had less yoghurt and less chicken. Added more pistacios than needed as had not enough cashews (or chicken) and these combined were delicious. So tasty and delicious with heaps of sauce perfect to add to steamed veg or salad. Saving this one (though I did add 1 cinamon stick, next time just half as required). Thanks so much! If you need more reference my family usually despise any main meals from Thermomix... no exageration lol

Step 12 I think is a typo .... speed 10 is very fast ... and for 60 seconds with hot liquid ?? Surely this should be 6 seconds?
Flavour is very good - would recommend removing the cinnamon before step 12 if you are serving to childen.
Yumm and easy. There was heaps of sauce left over, I think next time I could sneak in a heap more chicken.
I have frozen the leftover sauce so I can just brown off some chicken and add in the sauce later. It will be a handy quick meal that I know the kids will devour.
