Beef Cheeks on Mashed Cauliflower & Baby Carrots
- 600 grams Beef Cheeks, Trimmed & Quartered
- 3 cloves garlic, Peeled
- 2 --- brown onions, Peeled & Quartered
- 40 grams olive oil
- 100 grams red wine
- 200 grams water
- 2 tablespoons veg stock, From Recipe in BCB
- 20 grams flour
- 20 grams apple cider vinegar
- 50 grams Worcester Sauce
- 50 grams Parmesan cheese, Only using 20g for this recipe
- 1/2 cauliflower
- 1 bunch Baby Carrots
- 20 grams Milk

- Cube Parmesan and place in bowl. Grate 10 Secs / Speed 9.
Put aside for later. - Place Garlic & Handful of Rosemary Leaves in bowl. Chop 10 Secs / Speed 8. Scape down sides.
3. Add Onions. Chop 3 Secs / Speed 5. Scape down sides.
4. Add Oil. Sauté 10 Mins / "Counter-clockwise operation" Reverse 120° / Speed 1.
5. Add Remaining ingredients excluding Cheese and below.
6. Cook for 60 Mins / "Counter-clockwise operation" Reverse 100° / Speed 1.
7. Check if more seasoning or liquid needed.
8. Cook for 20 Mins / "Counter-clockwise operation" Reverse Varoma / Speed 1.
9. Stir and check if more liquid needed. Place Cauliflower Florets in Varoma Basket. Peeled & Trimmed Baby Carrots in Varoma Tray. Place in position on lid.
10. Cook 20 Mins / "Counter-clockwise operation" Reverse Varoma / Speed 1.
11. Check Cheeks are tender and vegetables are cooked.
12. Place Cheeks and Sauce in Thermoserver.
13. Clean bowl add Cauliflower, 20g Parmesan Cheese (balance store in airtight container in fridge or freezer for future use) and Milk. Mash 5 Secs / Speed 4. Check consistently is to your liking.
14. Assemble mash, Cheeks & Carrots on plate & garnish with Italian Parsley.

Great recipe, great flavour but when cooking put speed up to about 2 as meat gets caught under blade and as gets hotter it melted my blade & base together.
just thought I would share
