Ingredients

Soup

  • 350 g bacon, fat removed and chopped
  • 2 cloves garlic, peeled and whole
  • 1 --- red onion, halved
  • 2 stalks Celery
  • 2 --- Birdseye chili
  • 2 cans diced tomotoes
  • 350 g water
  • 2 tablespoon veggie stock paste
  • 2 cans Borlotti beans
  • 1 bunch parsley
  • 1 tablespoon olive oil

bread

  • 1 piece ciabatta bread
  • 50 g Parmesan cheese

Recipe's preparation

    Recipe
  1. Place 50g of parmesan in the bowl and proces for 5sec, speed 8. 

  2. Cut ciabatta bread in half and sprinkle with parmesan cheese. I recommend ThermoMiss's bread //www.recipecommunity.com.au/breads-rolls-recipes/easy-ciabatta-bread/129897

  3. Add garlic, red onion, celery and birdseye chilli to bowl and chop for 3sec, speed 5, MC on. Scrape down the sides.

  4. Remove fat and finely chop your bacon. You could also place bacon in the first step to chop but I like my bacon to be nicely chopped so I cut it by hand

  5. Add bacon to bowl, saute for 8min, 100oC, speed Counter-clockwise operation"Counter-clockwise operation"  Gentle stir setting"Gentle stir setting" , MC on

  6. place prepared ciabatta bread under grill for about 5min, the bread should become crunchy. When it is ready, slice into croutons and allow to cool. 

  7. Add the diced tomatos, water and vege stock and cook for 5min, 100oC, speed Counter-clockwise operation"Counter-clockwise operation" 1.5, MC on

  8. Add the borlotti beans and cook a further 9min, 100oC, speed Counter-clockwise operation"Counter-clockwise operation" 1.5, MC on

  9. Remove 3/4 of the mixture and place in the thermoserver. Process the rest of the mixture speed 5, for 3 seconds. This thickens up the soup a little. Add the thickened mixture to the rest in the thermoserver. 

  10. Stir through the pasley and serve with the cheesy croutons. Season to taste with salt and pepper.

Tip

If your soup is too runny, process more of the mixture in the bowl to thicken it up. You could also replace the mesuring cup with the simmering basket.

    Was delicious, as I’m limited to what I can eat after stomach surgery this was very easy to blend for longer to break it down more for me and then place back into the rest for the family.
    All I would do next time is maybe cook for a little longer at the end to soften beans even more.
