- 800 grams thịt heo xay ( 9 - 20% mỡ ), 800g ground pork ( 9 - 20% fat )
- 1 gram muối, 1g salt
- 15 grams đường, 15g sugar
- 10 grams bột nêm gà, 10g chicken stock paste/powder
- 4 grams bột Alsa, 4g signle acting baking powder (Alsa brand)
- 35 grams tinh bột khoai tây hoặc tinh bột ngô, 35g potato/ corn starch
- 100 grams nước lạnh, 100g cold water
- 10 grams nước mắm, 10g fish sauce
- 60 grams dầu ăn, 60g unflavour vegetable oil
- 100 grams mỡ heo thái hạt lựu trần sơ qua nước sôi (tùy chọn), 100g pork fat, chopped & blanched (optional)
- 3 grams bột hành, 3g onion powder
- 2 grams tiêu trắng xay, 2g white pepper powder
- 1 piece lòng đỏ trứng, 1 egg yolk

- Thịt heo xay giàn mỏng đều trong túi zip. Dùng que tre ấn thành từng miếng nhỏ để dễ bẻ ra cho bước sau. Cất tủ đông 3h.
Bật lò nướng lửa trên dưới 180 độ C.
Cho thịt đã đông cứng, muối, đường, bột nêm gà, bột nổi, tinh bột khoai tây/ngô, nước lạnh, nước mắm & dầu vào.
Xay 3 phút tốc độ 8-10. "Dough mode" 5 phút. - Cho mỡ heo thái hạt lựu, bột hành, tiêu vào. "Dough mode" 2 phút.
- Bỏ ra khay nướng có lót giấy nến. Giàn đều thành hình chữ nhật & gói lại. Lật mặt giấy gấp lại xuống dưới. Nướng chả trong 15phút.
- Bỏ ra khỏi lò, mở giấy nướng & quét lòng đỏ trứng lên mặt chả. Nướng trực tiếp (ko có baking paper) mỗi mặt 5 phút.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
