Ingredients

The Crumb Mixture

  • 150 grams raw almonds
  • 1/2 tsp Dried parsley
  • 1/2 tsp dried oregano
  • 1 tbsp Onion Flakes
  • 1/2 tsp salt
  • pinch black pepper

Cheesy Spinach Mixture

  • 145 grams Baby Spinach Leaves
  • 250 grams Shredded Mozzarella Cheese
  • 220 grams cream cheese
  • 1 tbsp Garlic powder
  • 1 tbsp olive oil, For frying the spinach
  • pinch salt
  • pinch black pepper

Chicken Ingredients

  • 500 grams Chcken Breast cubed
  • 1 egg
  • 100 grams parmesan cheese cubed (1cm)
  • olive oil for frying

Recipe's preparation

    Cheesy Spinach Stuffed Chicken
  1.  

    1. Place raw almonds into mixing bowl, 5 sec/speed 9, stir through spices, salt and pepper, set aside

     

    2. Place parmesan cheese into mixing bowl, 10 sec/speed 9, set aside

     

    3. Wash out and dry mixing bowl, place 1 tbsp olive oil and baby spinach leaves into the bowl, season with salt and pepper. Saute 4min/100C/speed 1/reverse

     

    4. Without washing mixing bowl add the mozzarella cheese, cream cheese and garlic powder, mix 10sec/speed 5/reverse or slightly more if required. Transfer and set aside

     

    5. Rinse out mixing bowl, add the chicken ingredients, including the Parmesan cheese and 20 g of the crumb mixture into mixing bowl, 40 sec/speed 9

     

    Putting it all together

    1. Preheat frying pan on a medium heat, and oven to 180 degrees

     

    2. Divide chicken mixture into 4 or 6 round balls, wet hands works best

     

    3. Flatten out the balls to the size of your palm,place a heaped tbsp of the spinach mixture in the centre. Fold chicken around the spinach mixture and form an oval shape. Ensure all the spinach mixture is covered

     

    4. Coat chicken in the crumb mixture and set aside

     

    5. When all chicken is coated, re-crumb a second time

     

    6. Place oil into frying pan and lightly fry the chickens for 2 - 3 minutes each side, until starting to golden

     

    7. Transfer the fried chicken to a roasting tray and bake in the oven for 10 minutes or until done

     

    8. Allow to rest a few minutes before serving.

     

    * Breadcrumbs can be used instead of the almond meal

    Absolutely delicious! Big hit in our household and will be a regular from now on. I had plenty of mixture for the centres left over so have frozen this for the next time I make it. I've also featured your recipe on my Thermie FB page for my followers to see, here's the link:

    We made these last week and they were beautiful. A great way to get spinach into my 1 and 4 year old girls. I followed the lead of the previous comments and cut the cheese mixture in half, and we still had plenty. I also made mine into smaller balls for my girls, and they were perfect, so they'd be a fantastic party food.

    Absolutely delicious!  Made 1kg of the chicken and twice the crumb mixture because I had plenty of the cheesy spinach mixture which easily gives you for 2 batches as is. Very tasty and yummy. Saved in my favourites

    This was delish thank you! I substituted the cashews for almonds and a few sunflower seeds, and cream cheese for ricotta and it worked perfectly. Also used tasty cheese (not moz) and just cubed it, not grated to save time. Heaps of spinach/cheese mixure left over so have frozen in ice cube trays for next time (enough for at least 2 more batches). Thanks..kids all loved it. Will be a regular in our house! Quick, heathly(ish!) and yum!
