Ingredients

Chicken Mixture

  • 1 onion
  • 2 cloves of garlic
  • 50 g olive oil
  • 1 medium carrots
  • 1 Medium zucchinis
  • 400 g tomato passata, (Can use a tin of tomatoes)
  • 1 tbsp tomato paste
  • 1 tbsp TM stock concentrate
  • 1 tin red kidney beans, (Optional)
  • 500g chicken mince, (Can mince in the TM first)

Béchamel Sauce as per EDC

  • 50 g Butter
  • 50 g flour
  • 500 g Milk

Assembly

  • 1 Large Sweet Potato
  • Baby Spinach Leaves
  • Lasagne Pasta Sheets, Dry or Fresh.

Recipe's preparation

    Chicken Mixture
  1. Add garlic and onion to the mixing bowl and mince 3 sec/peed 6. Add oil and sauté for 3 minutes Varoma temp speed 1.

  2. Add carrot and zucchini and blitz 5 sec/speed. Cook for 3 min/Varoma/speed 1.

  3. Add Chicken mince and cook for 10 min/Varoma/Counter-clockwise operation"Counter-clockwise operation" /speed 1 with the MC off.

  4. Add Passata tomato, tomato paste, stock, kidney beans and cook 10 min/100C/Counter-clockwise operation"Counter-clockwise operation" /speed 1. You can place the basket on top of the lid in place of the MC.  Set aside while you make the Béchamel Sauce. 

  5. Béchamel Sauce
  6. Add all ingredients and cook for 7 min/90C/speed 4 as per your Everyday Cookbook.

  7. Assembly
  8. Assemble the lasagne any way you like, this is the way that I like to do it - 

    • White sauce thin layer.
    • Pasta Sheets
    • Meat Sauce
    • Spinach leaves
    • Thinly sliced sweet potato
    • Repeat until the top of the baking dish.
    • Finish with a layer of pasta followed by white sauce and top with cheese.
    1. Bake in the oven for 30 – 45 minutes at 180 degrees. Use a knife to check that the sweet potato and pasta sheets are all cooked through.

Tip

I never usually add Salt into a recipe that has the TM stock. I always taste and add if needed at the end of the cooking time. 

You could definitely add some fresh herbs into the recipe. Some parsley or oregano would work in well. I left it out today to cater to a suddenly fussy 3 year old! 

To check to see if the lasagne is cooked through use a knife to test that the sweet potato and pasta are soft.

    Love this dish, I leave out the beans, use cauliflower purée as the bechamel and use diced chicken thigh.

    I was also unsure about the addition of red kidney beans so used butter beans instead with great results, as they are a less obvious, subtle flavour and texture.

    Also did a double batch of recipe chip bechamel sauce and this was perfect for my very large lasagne dish.

    Really tasty as was but I will add a generous amount of herbs and seasoning in next time.

    This was my very first lasagna and it was delicious! I used chicken breast which I diced quite small. It broke up into tiny pieces but that didn't worry us at all. I left out the kidney beans and used eggplant instead of sweet potato. I used 1.5 x the bechemel sauce but mine was very runny (maybe because I used skim milk) so I threw in some cornflour and it thickened easily. On the top I used some Parmesan and some grated cheddar - perfect!

    This was delicious! I didn't add kidney beans and I substituted the sweet potato with potato (I would par cook potato next time).

    My husband and I enjoyed this! Next time I would double the chicken mixture so make a bigger serve (to freeze extras). I am not a huge fan of chicken mince so used cubed chicken thighs for a chunky version. I skipped the spinich and sweet potato and just layered the sauce and lasagne sheets, topped with bechamel and cheese.

    This was nice, but will use chicken thigh next time. The chicken mince turned out almost paste-like, which is fine, but we prefer a more chuncky texture. Thanks for sharing.

    I found this to not have much flavour... I think cooking the meat for a total of 20 mins is too long as mince doesn't take long to cook at all. Next time I will cook the meat and sauce together for just 10 mins. I would also add Parmesan and a tsp of English mustard and some cracked black pepper to the bechemel sauce as it was also a bit bland.
