Chicken & Mushroom Pie filling
- 600 grams chicken breast, 1cm Diced
- 700 grams water
- 6 shallots
- 50 grams Butter
- 1 onion
- 4 tablespoons plain flour
- 2 tablespoons French Mustard
- 65 grams mayonnaise
- 400 grams full cream milk
- 1 egg
- 250 grams mushrooms, Sliced
- 200 grams bacon, Chopped

- Place diced chicken in Varoma, use both tray & dish.
Fill Thermomix bowl with water.
Cook chicken for 8 mins, Varoma, Speed 1.
Stir chicken pieces, place Varoma lid back on and cook for a further 7 mins.
Transfer cooked chicken to Thermoserver or bowl, put aside.
Empty water from bowl.
Cut onion in quarters & roughly chop shallots and place in bowl. Chop 4 secs, speed 6. Scrape down sides.
Add chopped bacon & 50g butter.
Saute 5 mins, 120, reverse speed .
Add flour, mustard & mayonnaise. Mix 20secs, reverse speed 2.
Add milk, cook 5 mins, 90, reverse speed 3.
Add beaten egg, mix 30secs, reverse speed 3.
Add mushrooms and cooked chicken, mix 1 min, reverse speed 3.
Give a stir with spatula.
Filling is ready to use to make 8 small pies or 1 large pie

Tip
I use a Sunbeam pie maker to make 8 pies with the mix.
I cook pie with shortcrust pastry for base with puff pastry for lid.
Can use meat from a BBQ chicken for a quicker meal/snack.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
