Ingredients
Chicken Saagwala
- 1kg chicken thighs, cut into 3cm cubes
- 150 gram baby spinach
- 1/2 cup water
- 5 peppercorns whole
- 4 cloves whole
- 4 cardamom pods
- 1 teaspoon Ground Coriander
- 1 teaspoon ground cumin
- 1 tablespoon garam masala powder
- 2 onions (large), halved
- 3 garlic cloves
- 2 centimetre cube ginger fresh, peeled
- 1 tablespoon Evoo
- 2 tomatoes (medium), halved
- Salt & pepper to taste
- 3 handfuls of cashew nuts, raw

Add baby spinach and water to mixing bowl, season with salt and pepper, chop 5 seconds/speed 9. Set aside.
In a clean dry bowl, add whole spices and dry roast 2 mins/Varoma/speed 1 "Counter-clockwise operation" .
Remove whole spices.
Add ground spices and dry roast 2 mins/Varoma/speed 1.
Place onion, garlic and ginger in mixing bowl and chop 3 sec/speed 7.
Return whole spices to mixing bowl.
Add oil and saute 3 min/Varoma/speed 1 "Counter-clockwise operation"
Add tomato to the mixing bowl and chop 5-8 sec/speed 5.
Insert butterfly, add chicken and cook 17 mins/100C/ "Counter-clockwise operation" /speed 1
Add spinach mixture and cook for a further 3 mins/100C/ "Counter-clockwise operation" /speed 1
Transfer all the mixture from the mixing bowl and strain through a sieve, reserving the liquid.
Put the chicken and spinach mixture into the thermo saver.
Return half the reserved liquid to the mixing bowl. Add the cashew nuts and a couple of dashes of garam masala and blend 1 min/speed 9.
Mix sauce through chicken and spinach mixture.
Serve with Basmati Rice
