Ingredients

Chicken Thai Green curry

  • 500 g Chicken thighs or breast, 2-3cm cubes
  • 20 g sesame oil
  • 20 g Evoo
  • 2 --- Medium potatoes, Cut into 1 cm thick slices
  • 65 g Valcom Thai Green Curry Paste, (or make your own as per Cookidoo)
  • 400 g coconut cream, I use the whole Thermofun recipe
  • 500 g water
  • 150 g baby spinach

Recipe's preparation

  1. Cook chicken cubes as per sautéed chicken cubes in Cookidoo in 2 batches (we omit onions and garlic and I use 10g EVOO and 10g Sesame Oil to cook in). I find due to the flour coating the chicken needs to be cooked twice.

    Put chicken aside in a bowl

    Cook curry paste 1min/varoma/4 in 10g olive and 10g sesame oil

    Scrape down sides of bowl

    Add potatoes and chicken and stir until coated with paste

    Add coconut cream, chicken stock and water

    Cook for 15 mins/120 degrees/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting"

    Add spinach

    Cook for final 5 mins/120 degrees/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting" . Ensure potatoes are cooked and add time if necessary.

    Serve with cooked rice
